A Cloudy Day

Clouds are beautiful, but today they were also delicious.
This morning I tied on my apron to press clouds into butter cookies and as each image emerged it made me ridiculously happy!
This beautiful Cloud Biscuit Press was a Christmas gift from my employer, Kerist and it astounds me that today was the first time I had used it. It is yet another beautiful creation of Kylie Johnson from Paper Boat Press.
I decided to create the cloud cookies to share with my friend, Lizette and they were the perfect sweet treat to serve with a pot of tea. 
I used The Style Emporium's Butter Cookie recipe and it created an abundance of cookies, about 50. It was so lovely to see them in the oven and once cool I used a soft brush to sweep glucose syrup onto the cloud and then dusted Twinkle White Rainbow Dust onto its raised surface - gorgeous glitter to enhance a perfect cloud.
I love to share sweet treats and so I created three cloud cookie care packages for friends.
It was a delight to deliver them this afternoon - there is joy to be found in giving.

BUTTER COOKIES

185g butter
3/4 cup caster sugar
1 1/2 teaspoons vanilla extract
2 1/2 cups plain flour
1 egg + 1 egg yolk

Process butter, sugar and vanilla in food processor until smooth.  Add flour and eggs and process until a smooth dough forms.
Knead lightly then wrap in plastic wrap to refrigerate for 30 minutes.
Roll dough between sheets of non-stick baking paper, cut shapes and place on oven tray in a 180 degree pre-heated oven for about 10 minutes or golden.

Ainslee, the cookies were beautiful, and a wonderful treat to share with you, and it was a shame to eat them.... but they were so good.
